The holiday’s might be over but there are still a ton of great reasons to whip up a quick snack. For example, it’s Thursday, you found a lucky penny or the weather is above 30°F, these are all excellent reasons to celebrate! Whatever your reason for celebrating though, my thought is always to keep it easy!
If you’ve made a resolution this year to celebrate more of the little things in life (like finding that lucky penny or the lovely weather!) then you’ll need to arm yourself with a handful a simple ideas that barely count as recipes. Sure the ideas have to be simple but they also need to have enough going on so they’ll impress.
Toasted bread, cheese, tasty toppers and a drizzle are the best ‘build your own’ snacks around. You can serve them with a cheese platter or on their own, offer a bunch of options to make it more of a meal, or aim for something light to pair with your beverage of choice.
This pear and blue cheese crostini is the perfect balance of sweet and savory, smooth and crunchy, earthy and bright. We served these with a light crisp white wine but I could totally see this going great with a bubbly or even a cider. If pomegranate seeds aren’t in season, dried cranberries would be a great alternative and feel free to swap apple slices in for the pear if that’s more your style.

- Total Time: 15 minutes

Ingredients
- 1 loaf (20-inch) baguette French bread, cut into 1/2-inch slices
- 1 tablespoon olive oil
- 3 ounces crumbled blue cheese
- 2 fresh firm pears, thinly sliced
- 1/4 cup pomegranate seeds
- 1/4 cup toasted walnut halves
- 1 tablespoon fresh thyme leaves
- Honey
Instructions
- Heat oven to 350°F. Place sliced bread on ungreased cookie sheets; lightly brush with olive oil. Bake 6 to 9 minutes or until crisp. Cool completely.
- Spread blue cheese mixture on top of each baguette slice. Top with pear slice, walnut, pomegranate seeds, thyme and a drizzle of honey.
