This summery skillet recipe of Grilled Tomatoes with Burrata and Basil is a great appetizer, light lunch or dinner served over pasta!
We’ve been spending a lot of time camping this summer up in Northern Minnesota. It’s been so nice to relax and unplug for a few days and really enjoy the hot summer afternoons. We spend most of our time at the lake swimming, scuba diving, hiking and off roading on our dirt bikes but as you know, food is never far from my mind.
Camp cooking isn’t as easy or convenient as cooking at home in my well stocked kitchen but it is a fun challenge that I’ll gladly accept! My sister is a big weekend warrior too and has a few camp cooking hacks up her sleeve that I’ve recently been admiring. My favorite is one that I used in this recipe – mix, cook and serve in the same pan so you don’t have to wash a lot of dishes. See how smart that girl is? So, skip the bowl and take 5 minutes to throw some tomatoes, a few aromatics and some olive oil together into a skillet. You’ll be so happy you did!
This recipe is great for small and super flavorful tomatoes like the ones that are absolutely taking over my garden right now! If you don’t have your own backyard stash, any grape or cherry tomato will work but aim for something with lots of color. As for the cheese, burrata is currently having a moment and it will simply melt right into the tomatoes but, a few slices of fresh mozzarella will work great too!
Serve this summery skillet of cheese topped tomato-y goodness with some grilled bread as a snack or with a pile of pasta for a super easy dinner!

Ingredients
- 2 pints cherry tomatoes
- 3 cloves garlic, finely chopped
- 1 shallot, thinly sliced
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- Pinch of black pepper
- Pinch of red pepper flakes
- 4 ounces burrata cheese
- Balsamic vinegar
- Fresh basil leaves or fresh oregano
- 1 baguette, halved and grilled
Instructions
- Heat grill. In a medium cast iron or oven safe skillet, stir together tomatoes, garlic, shallot, olive oil, salt, pepper and red pepper flakes. Place the skillet on the grill over medium-low heat for 10 to 15 minutes or until the tomatoes are starting to pop.
- Tear a burrata ball into pieces and place on top of the roasted tomatoes. Grill an additional 5 minutes or until the cheese is melted. Top with a drizzle of balsamic vinegar, salt, pepper and fresh basil or oregano. Serve with slices of grilled baguette.
Notes
Not grilling season? Bake at 400°F for 15 to 20 minutes, or until the tomatoes are roasted and burst. Top with burrata and bake an additional 5 minutes until the cheese is melted.
