This super simple 15-minute spicy shrimp and rice is one of the best last minute dinner recipes around! Bonus, it’s even gluten free!

Ingredients

1 cup uncooked white rice
1 pound raw shrimp, peeled and deveined (thawed and patted dry if frozen)
1 tablespoon olive oil
1 clove garlic, finely chopped
Pinch ground chili powder, cumin, cayenne pepper, salt and pepper
Fresh parsley, for garnish
Instructions
Cook rice according to package directions.
Meanwhile, In a medium bowl, toss together the shrimp, olive oil, garlic, chili powder, cayenne, salt and pepper; to coat evenly. Marinate for 10 minutes or up to 8 hours.
Heat the skillet over medium heat until thoroughly heated. Add the marinated shrimp and cook, tossing occasionally for 4 to 5 minutes or until cooked through. Add a tablespoon or two of water or stock to create a sauce.
Serve shrimp over rice with the sauce, garnished with parsley.
