Last summer we took a trip to Korea and Japan and ate our way through the city, you guys it was amazing and yes, someday I’ll tell you all about it!
But, right now I want to tell you about this ramen. I’ve always been a fan of ramen from the days in college with the styrofoam cups and cheap overly salted packets. But, the ramen we had was the kind of thing you dream about.
I’ve always wanted to make ramen at home but it takes forever to get all the complex flavors and let’s be real, no one has time for that. But, a slow cooker version, that’s a bit of a hack and still pretty tasty, yep I can do that!
Under 30 minutes to get it to the slow cooker, this is quick to make, simple and delicious! The pork simmers away all day making dinner easy and the broth super flavorful. Grab your bowl and flavorful toppings kids, this stuff is yummy!

Ingredients
- Slow Cooker Ramen
- 2 teaspoons vegetable oil
- 2 to 3 pounds pork shoulder roast, trimmed
- 8 cups chicken or beef stock
- 3 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 4 cloves garlic, finely chopped
- 2 tablespoons sambal oelek
- 2 tablespoons fresh lime juice
- 2 tablespoons fish sauce
- 1 tablespoon toasted sesame oil
- 1 tablespoon grated fresh ginger
- 1 tablespoon brown sugar
- 1 teaspoon ground black pepper
- Toppers
- Ramen noodles (seasoning packets discarded), hard cooked eggs, fresh basil, cilantro, green onions, carrots, daikon radish, jalapeños, black sesame seeds
Instructions
- Heat the oil in a large skillet over medium-high heat. Add the pork shoulder and brown on all sides.
- Add the pork, stock, soy sauce, rice vinegar, garlic, sambal, lime juice, fish sauce, sesame oil, ginger, sugar and pepper to a 4- to 5-quart slow cooker. Cover and cook on low for 8 to 10 hours or on high for 5 to 6 hours or until the pork is tender.
- Transfer the pork to a cutting board. Using two forks, break the pork into bite-size chunks, removing and discarding any large pieces of fat. Strain the broth through a fine-mesh sieve into a bowl and discard the solids. Return the pork and broth to the slow cooker and season to taste.
- Cook the ramen noodles according to the package directions. Divide pork, broth and noodles between bowls and garnish with all of your favorite toppers.

How long do you need to brown each side of the pork?

Hi Christy, Great question! Just cook the pork until all the sides are browned, it should only take a minute or two on each side when you have it over medium-high heat. I hope you enjoy the recipe!
