Light, fluffy eggs topped with fresh crumbled Mexican cheese, cilantro and plenty of fresh toppings, these tacos are full of flavor and freshness. Swap in corn or gluten free tortillas for the flour tortillas and use cooked chicken, steak, or even tofu instead of the chorizo, just don’t forget the hot sauce for a spicy kick!

Ingredients
- Scrambled Eggs
- 1/2 bell pepper, thinly sliced
- 2 links smoked chorizo sausage, sliced
- 8 flour tortillas
- Sliced avocado
- Crumbled queso fresco cheese
- Sliced jalapeno
- Chopped cilantro
- Hot sauce or salsa
- Lime wedges
Instructions
- Make a batch of scrambled eggs, stir in the bell pepper and set aside.
- In a medium skillet, sauté the sliced sausage over medium heat 2 to 3 minutes until browned.
- Heat the tortillas and top with the eggs, sausage, and desired toppings.
