It’s tomatillo time! Yep, those weird little things that look like green tomatoes wrapped in a papery husk. They’re in season and showing up at farmers’ markets everywhere. They are related to a tomato but have more of a tart and citrusy flavor. That makes them delicious when paired with something good and spicy.
They’re good raw but I prefer them roasted and slightly charred to bring out the full flavor of the tomatillo. Blended up with garlic, jalapeños and cilantro, it makes a brightly flavored salsa. It’s quick to make and pairs well with everything from chicken to scrambled eggs or just devoured by the chipful! So, grab a beer and dig in.
Roasted Tomatillo Salsa
Prep Time: 15 minutes
Start to Finish: 30 minutes
1 pound fresh tomatillos, husks removed (about 8 medium)
2 medium jalapeños, halved, stemmed and seeded
1 garlic clove, peeled, halved
1 cup coarsely chopped fresh cilantro
1/2 teaspoon sea salt
Tortilla chips
Preheat broiler. Rinse tomatillos under warm water to remove stickiness; cut in half. Broil tomatillos, jalapeños and garlic on rack of a broiler pan 4 to 5 inches from heat, turning once, until tomatillos are softened and slightly charred, 5 to 7 minutes. Cool 5 minutes.
In a blender or food processor, mix tomatillos, jalapeños, garlic, cilantro and salt. Cover and blend until desired consistency. Serve with tortilla chips.
Makes: About 1 1/2 cups
