Roasted Sweet Potato Hummus

What are you guys eating these days? Can I live eat vicariously through you? Only 15 days to go!

I normally slather hummus on everything from flatbread to sandwiches, salads and veggies. But, since chickpeas aren’t allowed on the Whole 30, I had to come up with a hummus alternative that was just as versatile and delicious.

Brightly colored, sweet and spicy this sweet potato hummus is my new best friend! I’ve been gobbling it up by the cupful with fresh veggies, but it would be great served with toasted pita bread or sesame crackers for a yummy appetizer or party dish.

This sweet potato hummus is brightly colored, sweet and spicy. Serve it with veggies, pita or crackers for a yummy appetizer or party dish.

Ingredients

Scale
  • 2 sweet potatoes, peeled and diced (3 cups)
  • 3 large carrots, peeled and diced (2 cups)
  • 4 tablespoon olive oil
  • 1/2 teaspoon salt
  • 2 cloves garlic, with paper skins
  • 4 tablespoons water
  • 2 tablespoons spicy harissa sauce
  • 2 tablespoons tahini
  • 2 teaspoons fresh lemon juice
  • Garnishes
  • Spicy Harissa Sauce
  • Lemon Zest
  • Sliced Green onions

Instructions

  1. Heat oven to 375°F. In medium bowl, toss sweet potatoes and carrots with 1 tablespoon of the oil and salt. Arrange sweet potatoes, carrots and garlic on ungreased large cookie sheet.
  2. Roast about 40 minutes in oven, stirring once, until soft and caramelized.
  3. Cool vegetables slightly. In food processor, add roasted vegetables and remaining hummus ingredients. Cover; process until smooth and well combined.
  4. Serve hummus at room temperature topped with a drizzle of olive oil and fresh herbs and cut up veggies for dipping.
