As a kid, I loved veggies. When we would go out to restaurants, I’d often order just a big plate of steamed veggies covered in Cheddar cheese. Ok, so the excessive amounts of melty cheese probably cancelled out any healthy benefits of all the veggies. But, I was a kid and it was delicious!
Yep, I’m still a veggie junkie, but, now I go a little lighter on the cheese. These roasted cauliflower steaks are an adult version of those steamed veggies swimming in cheese.

Ingredients
- 1 head cauliflower
- 2 tablespoons olive oil
- 1/2 teaspoon coarse Kosher salt
- 1/4 teaspoon freshly cracked pepper
- 1/4 cup shredded Gruyère cheese
Instructions
- Heat oven to 425ºF. Remove outer leaves from the cauliflower keeping the stem intact; cut into 1/2-inch thick slices. Place the cauliflower in a single layer on an ungreased baking sheet. Drizzle with olive oil. Sprinkle with salt and pepper.
- Bake 25 to 30 minutes, gently turning once halfway through, until browned and crisp tender.
- Sprinkle with Gruyère cheese and bake an additional 5 to 8 minutes longer to melt the cheese.
