Yikes you guys, Thanksgiving is next week! Have you planned your turkey day menu yet? I kind of hope not, because I still have a few more recipes up my sleeve for you.
Our family tends to buck tradition for a totally modern twist on the Thanksgiving menu. A few years ago we had a Moroccan inspired meal with roasted lamb, harissa and saffron rice. The year before that, hand rolled sushi and miso soup. We love the tradition of being a bit untraditional. But, when our extended family gathers, that’s another story, tradition reins supreme!
However your family does it, you’ve got to start with some recipes that are sure to impress. That’s where this delicious and colorful side comes in handy.
These brussels sprouts are crispy, savory and salty. The fresh sweet pomegranates add a bit of freshness and the almonds, a bit of crunch. Easy enough for a weeknight dinner side and festive enough for a crowd!

These sprouts are colorful, delicious and festive with sweet pomegranate seeds and almonds for a bit of crunch.

Ingredients
- 1 1/4 pounds Brussels sprouts, trimmed and halved
- 2 tablespoons olive oil
- 1/2 teaspoon coarse Kosher salt
- 1/4 teaspoon freshly ground pepper
- 1/2 cup pomegranate seeds
- 1/4 cup coarsely chopped toasted almonds
Instructions
- Heat the oven to 425°F. In a medium bowl, toss the sprouts, oil, salt and pepper until well coated. Spread evenly on a large sheet pan and bake for 25 to 30 minutes, stirring half way through or until golden brown, crisp on the outside and tender on the inside.
- Garnish with pomegranate seeds and almonds.

pomegranate and almond brussels sprouts sound so good! my mom ex-nayed my notion of doing a kimchi and ginger roasted brussels sprouts dish for thanksgiving, so i think this will be a family-friendly alternative that still excites me (:
