I’m at it again with the za’atar seasoning. It’s one of my favorite herby spice blends and I sprinkle it on everything. This time, it’s on perfectly roasted wedges of acorn squash with fresh, bright lemon slices. Acorn squash is slightly sweet, tender and a great blank slate.
Pair it with roasted lemon, herby seasoning and a hearty drizzle of a tahini yogurt sauce for a flavorful winter squash dish.
When perfectly roasted, the peel on acorn squash becomes tender and easy to eat and digest. So, save yourself some time and leave the pretty, colorful peel on.
Double the tahini yogurt sauce and keep a container of it in the fridge for serving with everything from salads to burgers to tater tots and everything in between.
Za’atar is a Middle Eastern spice blend of sumac, sesame seeds, thyme and salt. You can pick some up at a Middle Eastern market, Penzeys spices or online.

Seasonal roasted squash with Za’atar seasoning and a Tahini Yogurt Sauce; a flavorful and healthy side dish!

Ingredients
- Roasted Za’atar Acorn Squash
- 1 medium acorn squash, unpeeled, halved, seeded and cut into 1/2 inch wedges
- 2 tablespoons olive oil
- 1 tablespoon Za’atar seasoning
- 1/4 teaspoon red pepper flakes
- Pinch coarse Kosher salt
- 1 lemon, thinly sliced into 1/4-inch rounds
- Tahini Yogurt Sauce
- 1/2 cup plain Greek yogurt
- 2 tablespoons tahini
- 2 tablespoons fresh lemon juice
- 1 clove garlic, finely chopped
- Pinch coarse Kosher salt
- Garnishes
- 1/2 cup chopped fresh parsley
- Za’atar seasoning
Instructions
- Heat oven to 425°F. In a medium bowl, toss the squash with the olive oil, za’atar, red pepper flakes and salt to coat.
- Bake 30 to 35 minutes, turning squash and adding lemon slices halfway through, or until fork tender and browned.
- Meanwhile, in a small bowl, stir together the yogurt, tahini, lemon juice, garlic and a pinch of salt. Stir in 1 to 2 tablespoons water if needed for drizzle consistency.
- Arrange squash, lemons and parsley on a serving platter. Drizzle with tahini sauce and sprinkle with za’atar seasoning.
