This pretty pink Rhubarb Gimlet cocktail is the perfect recipe for sipping. It’s light, fresh, fruity and slightly sweet.
The tart taste of rhubarb is one of my favorite spring flavors. The bright, freshness works well in jams, cakes, frozen treats and of course, cocktails!
As soon as those pretty pink rhubarb stalks popped up, I knew I’d pair a few of them with gin. I love the way the mint, lime and rhubarb bring out the herbs in the gin, but feel free to swap in vodka for the gin.
Save some time and make this into a batch cocktail. The simple syrup can be made up to 5 days ahead. Mx it all together in a cocktail shaker and shake over ice just before serving.

Ingredients
- Rhubarb Simple Syrup
- 1 cup water
- 1/2 cup sugar
- 3/4 cup chopped rhubarb
- Juice of 1/2 lime
- Rhubarb Gimlet
- 2 fresh mint leaves
- 2 ounces gin
- 2 ounces Rhubarb Simple Syrup
- 1/2 ounce fresh lime juice
Instructions
- In a medium saucepan, combine water, sugar, rhubarb and lime juice. Cook over medium heat, stirring occasionally, until all of the sugar has dissolved. Strain the syrup and refrigerate for up to one week. Makes about 1 cup.
- Fill a cocktail shaker with ice. Add mint leaves, gin, syrup and lime juice. Shake until well chilled. Strain into a cocktail glass and serve with lime.
