Weekend breakfasts are a bit of a tug-of-war for me. I can’t ever decide if I want something sweet or savory. I know, decisions are hard, especially before a big mug of coffee. These waffles are a genius mashup of deliciously sweet blueberry jam, maple syrup and savory parmesan, cilantro, bacon and egg. Yay for not having to make difficult decisions in the morning!
I usually make a double batch and store the leftovers in the freezer. Just pop them in the toaster for the best darn grab-and-go breakfast in a matter of minutes.
These yummy waffles are great for brunch served with a mimosa and fresh fruit and yes, your mother will love them!

Ingredients
- Waffles
- 3/4 cup all-purpose flour
- 1/4 cup cornstarch
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 1/2 teaspoons sugar
- 1/2 cup buttermilk
- 1/2 cup chicken broth
- 1/4 cup vegetable oil
- 1 large egg, lightly beaten
- 3 green onions, chopped
- 3 tablespoons chopped cilantro
- 1/2 cup cooked quinoa
- 3/4 cup freshly grated Parmesan cheese
- Toppers
- Eggs
- Thick cut bacon
- Avocado
- Blueberry jam
- Maple syrup
- Hot sauce
Instructions
- In a medium bowl, combine flour, cornstarch, baking powder, baking soda, salt, and sugar until well blended. Add the buttermilk, broth, vegetable oil and egg, whisk until well blended. Gently stir in the green onions, cilantro, cooked quinoa and Parmesan cheese. Refrigerate for 30 minutes to allow the batter to rest.
- Heat a waffle iron. Pour the batter into the waffle iron and cook according to manufacturers directions. Keep waffles in a warm oven (about 200°F) until ready to serve.
- Meanwhile, cook the bacon and eggs, as desired. Serve the waffles with all of your favorite toppings.
