I’ve made little bites of sunshine! Seriously, we’ve had what seems like weeks of cloudy, rainy, overcast days here in the Midwest. Not even a peek of sunshine for days, I tell you!
My solution has been to tuck myself away in the kitchen and make something bright, citrusy and sweet. It worked! And, it’s a great treat to share for the holidays.
These bright, little gems are simmered in a sugar syrup to make them tender and sweet. They’ll set up after a few hours at room temperature but will still be slightly sticky. You can use them to decorate a cake, quick bread or cupcakes or my favorite… dip them in chocolate!

Ingredients
- 1 cup sugar
- 3/4 cup water
- 4 tangerines or small oranges, cut into 1/8-inch slices
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a medium saucepan, bring the sugar and water to a boil over medium-high heat, stirring frequently until the sugar is dissolved. Gently layer the tangerine slices into the sugar mixture.
- Cover and simmer 10 minutes, stirring once. Remove from the heat and take off the lid. Let the tangerine slices cool in the syrup mixture for 10 minutes.
- Gently lift the tangerine slices with two forks, allowing the syrup to drain off. Transfer to a wire cooling rack or parchment paper-lined baking sheet. Let stand at room temperature overnight to dry. Reserve the syrup mixture for another use.
- In a 1-cup microwave-safe glass measuring cup, place chocolate chips and coconut oil. Microwave uncovered on High 30 seconds; stir. Microwave 15 seconds longer; stir until smooth. Cool 15 minutes before dipping tangerine slices.
- Dip half of each tangerine slice into cooled chocolate mixture. Place on a wire cooling rack or parchment paper-lined baking sheet. Let stand at room temperature about 15 minutes or until chocolate is set. They can be kept refrigerated for several days.
