I’m currently up to my eyeballs in a bumper crop of tomatoes! Don’t feel bad, it’s really all my fault. I planted waaaay too many tomato plants this year. But as far as problems go, it’s a pretty tasty problem to have.
Besides eating them fresh from the garden, my favorite way to serve them is a simple caprese salad; it’s a quick way to use up lots of fresh tomatoes when they’re at their peak.
I usually serve caprese salad over crusty French bread, crostini style for a heartier appetizer or dinner side with grilled steak or chicken and a glass of wine. It’s the perfect summertime dish for a party or a lazy weeknight dinner.

Ingredients
- 24 slices (1/4 inch thick) baguette French bread
- 1 container (16 oz) ciliegine mozzarella (cherry-size mozzarella balls)
- 1 pound mixed fresh tomatoes, cut into bite-sized pieces (about 4 cups)
- 1/4 cup thinly sliced fresh basil leaves
- 3 tablespoons olive oil
- 1 tablespoon white balsamic vinegar
- Salt and pepper to taste
Instructions
- Heat oven to 325°F. Place bread slices on an ungreased cookie sheet; brush lightly with olive oil or butter. Bake 6 to 9 minutes or until crispy, turning once during baking; set aside.
- In a medium serving bowl, gently toss remaining ingredients and serve. Serve with crusty bread.
Notes
The white balsamic vinegar helps to keep the bright colors of the tomatoes, but you can also use balsamic vinegar or leave it out all together.
