I’ve mentioned my love-hate relationship with my slow-cooker a few times. It’s convenient but if you’re not careful, everything that comes out of it tastes the same. It overcooks some things and undercooks others but, it’s the hands-off-cooking that helps the slight annoying little appliance earn its keep. This is the perfect recipe for people who are on the slow cooker fence like me! Just stir together a few ingredients, crank up the slow cooker and sit back while your house begins to smell cinnamon-y sweet. It’s really just that easy!
A mix of your favorite apples work in this dish and are a great way to try out different flavors. I love spreading apple butter on a slice of toasted Cranberry Wild Rice Bread or spooned on top of a bowl of ice cream! - Prep Time: 15 mins
- Cook Time: 8 hours
- Total Time: 8 hours 15 minutes
- Yield: about 4 cups 1x
Ingredients
- 8 medium apples, peeled and cut into 1-inch chunks
- 3/4 cup honey
- 1/4 cup bourbon whiskey
- 1 vanilla bean, split, seeds scraped
- 1 1/2 teaspoons fresh lemon juice
- 2 cinnamon sticks
Instructions
- Toss all ingredients in 4- to 5-quart slow cooker. Cover and cook on low heat 6 to 8 hours or until apples are very tender.
- Remove the cover from the slow cooker and continue to cook on low heat for 2 to 3 hours, stirring occasionally until very thick. Remove and discard the cinnamon sticks and vanilla bean.
- If desired, purée the mixture in a blender or food processor for an ultra smooth texture.
- Spoon into a glass jar. Let cool, then cap and store in the refrigerator for up to 3 weeks.
