These frozen pops are delicious! They’re quick to make and perfectly fruity, but they have a secret ingredient. You’ll never guess what it is… goat cheese!
Yeah, it’s kind of weird, but the goat cheese gives the frozen pop a slightly tart flavor that’s totally irresistible. But, I suppose, if you don’t like goat cheese you can replace it with cream cheese. I went with swirls of blackberry and raspberry, but you could use strawberries or even blueberries.
The yogurt mixture is lightly sweetened with honey and a squeeze of lemon. They’re sweet, creamy, tart and delicious, and I’ve eaten almost all of them.
Berry Swirled Frozen Yogurt Pops
Prep Time: 20 minutes
Start to Finish: 9 hours 20 minutes
1 cup fresh raspberries
1 cup fresh blackberries
6 tablespoons sugar
3 tablespoons creamy goat cheese or cream cheese, softened
2 cups plain full-fat yogurt
1/4 cup honey
1 tablespoon fresh lemon juice
Place raspberries and blackberries in two separate bowls. Sprinkle each bowl with 3 tablespoons sugar. Stir, cover and let the fruit and sugar stand for 1 hour. Use the back of the spoon to mash up the fruit. Strain both raspberries and blackberries separately into two bowls, pressing fruit through a fine mesh strainer to get all the sweetened fruit juice.
Whisk half of the softened goat cheese into the raspberry juice and the other half into the blackberry juice until well blended.
In a large bowl, mix together yogurt, honey and lemon juice until smooth.
Spoon half of the yogurt mixture into the bottom of 6 popsicle molds. Evenly spoon blackberry mixture over yogurt. Top with remaining honey-yogurt and raspberry mixture. Place sticks in popsicle forms. Freeze 8 hours, or until firm.
To remove popsicles, run warm water on the outside of the popsicle form until it releases.
