You too can sleep in on Christmas morning or any other day for that matter. Instead of getting up waaaayy before your guests to make a fancy breakfast or brunch, sleep in and make this!
Just throw together oats, spices, milk, nuts and fresh cranberries and bake until the aroma wafts throughout the house and wakes everyone up. Then, whip up the caramel sauce just in time for the oatmeal to come out of the oven and your guests (or family) to wander blurry-eyed into the kitchen looking for breakfast.
Serve with bottomless cups of coffee, a big bowl of fresh fruit and maybe some mimosas for good measure. PJ’s required!

An easy baked Gingerbread Oatmeal with fresh cranberries. It’s warm, delicious and generously topped with bourbon sauce.

Ingredients
- Oatmeal
- 2 2/3 cups old-fashioned oats
- 3/4 cup chopped walnuts
- 1/3 cup packed brown sugar
- 1/4 cup mild molasses
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 4 cups milk
- 1 cup whole, fresh cranberries
- Bourbon Sauce
- 1 cup packed brown sugar
- 1/2 cup butter
- 2 tablespoons whipping cream
- 3 to 4 tablespoons bourbon
Instructions
- Heat oven to 350°F. In a large bowl, mix all oatmeal ingredients. Pour into a greased 2 1/2-to 3-quart baking dish.
- Bake uncovered 40 to 45 minutes or until most liquid is absorbed.
- Meanwhile, in 1-quart heavy saucepan, heat all sauce ingredients to boiling over medium heat, stirring constantly, until sugar is dissolved.
- To serve, pour sauce over warm oatmeal.
Notes
I’ve called for old-fashioned oats in this recipe. They cannot be replaced with quick cooking oats, as they will become overly soft during baking.
Any remaining caramel sauce can be refrigerated for another use. Reheat gently before serving over ice cream, yogurt or your morning bowl of cereal.
